How to Freeze:

Spoon the meat mixture into a plastic container. Before freezing, chill inside the refrigerator.

Thawing and serving instructions:

Thaw the meat completely in the refrigerator. Heat through the same skillet on medium heat. Put the bell peppers in the skillet and cook until the peppers are just crisp-tender, about 5 minutes. Serve over hot cooked rice.

Herbed Meatballs

Serves 12 to 16

Packaging: Quart- or gallon-size zip-top freezer bags

You Will Need:

4 pounds ground beef

1 teaspoon kosher salt

3 cloves garlic, chopped

1 tablespoon dried basil or 3 tablespoons chopped fresh basil

2 tablespoons dried parsley flakes or ⅓ cup chopped fresh parsley

1 cup chopped onion

6 large eggs, beaten

3 cups fresh bread crumbs

How to Prepare:

Line two baking sheets with foil. Brush the foil with cooking oil or spray a little amount of nonstick cooking spray. Set the oven to 350°F

Combine thoroughly, without over-mixing, all the ingredients in a large bowl.

Knead the mixture and form it into small balls. Place the balls on the sheet and bake until cooked through, or for 15 minutes.
